Sauces: Mango-lime dressing
Salads are only boring when you make them boring, and this dressing is the exact opposite of boring. It’ll have the world’s biggest salad hater positively BEGGING you to make them “that thing with the mango-lime dressing”.
Mangos are relatively high in antioxidants, with a antioxidant power score of 108. To give you some perspective, it’s popular friend the apple scores 56, and the banana scores only 27. Despite being tropical and tasting super sweet, mangos don’t have a bad effect on blood sugar due to the phytonutrient mangiferin. So, fear not. The limes drop in some Vitamin C, and we’ve snuck in coriander to give you the benefit of greens.
1.5 cups frozen or fresh mango
3 limes, juiced
1 tbsp rice wine vinegar
1 tbsp olive oil
1/4 cup fresh coriander
4 tbsp vegetable stock
1 Sandwich bag
In a food processor or blender, combine all of the ingredients and blend on high until well combined
Pour into an ice cube tray, wrapping in cling wrap to prevent icicles from forming, and place in the freezer overnight
Once frozen, transfer ice cubes into a sandwich bag and store in the freezer until required
